10-minute Berry Chia Jam

Description

A delicious replacement to traditional jam without all the sugar.

Ingredients

2 cups fresh or frozen berries

2 tbs chia seeds

1 tsp vanilla extract

2 tbs honey or maple syrup to taste

lemon juice to taste


Instructions

Gently simmer the fruit in a saucepan for a few minutes. Break up the fruit with a fork or masher.

Add the chia seeds, vanilla extract, lemon juice and honey to taste.

Keep stirring so the chia seeds don’t clump up. Simmer for about 10 minutes until thickened.

The jam will thicken even more as it is cooling.

Serve immediately or store in a glass jar in the fridge for up to a week or 3 months in the freezer.
