Caramel popcorn

Popcorn is a firm favourite snack for most people, especially children. I often treat my children with this caramel popcorn when watching a movie together. It is super easy to make and really delicious. You can use almond or peanut butter for this recipe.

Ingredients

60g almond butter
125g honey
125g popcorn kernels (8-10 cups popped corn)
5 ml cinnamon
125g chopped pecan nuts

Method

Place the kernels in a glass bowl and add 1 tbs of oil. Place in a microwave with a lid for three minutes or you could just pop the kernels in a saucepan.

While the popcorn is popping, heat honey in a pot until boiling for a few minutes just to help it carmelize.

Remove the saucepan and add the nut butter, whisk until soft. Add the cinnamon and pecan nuts.

Pour this mixture over the popcorn and stir through with a spoon. Once it is a little colder you could use your hands to mix it further.

Let it cool down and serve.
