I watched a video by @magriet.co a social media expert and Magriet said I should tell you what I do. So here it is:)⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
At this stage, a lot of different things food-related. I loved teaching cooking classes but I want to create more time with my family, I want to stress less, my health is important to me. So I am carving out my dream job/life one step at a time.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
* So at this stage I am running my food blog and learning to take amazing food pictures, not quite there yet:) I am also working more with brands and will be adding appliances and homeware to my shop that I believe every kitchen should have. I also sell pantry labels and fridge meal planners on my shopI to help you be more organised in the kitchen. I want the blog to be a space where people can find a lot of good advice regarding pantry staples, kitchen organisation, kitchen equipment, meal planning. Creating recipes that nourish and guiding people in living in a more healthy & sustainable way.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
* I am also running another social media account for a client, where I am learning a lot about sustainability.⠀⠀⠀⠀⠀⠀⠀⠀⠀

* I work with brands to create recipe content⠀⠀⠀⠀⠀⠀⠀⠀⠀

* I consult with clients in their homes regarding meal planning, pantry organisation, kitchen equipment and also giving private cooking classes. This is still a program I am developing. But I am lucky to have a few great clients I am working with.⠀⠀⠀⠀⠀⠀⠀⠀⠀

* I want to record online class content, but have not started⠀⠀⠀⠀⠀⠀⠀⠀⠀

* I create recipe e-books with meal plans to inspire people to eat healthier and getting more organised in the kitchen. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

In the afternoons I am a mom, that is my most important job title.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Hope your Monday is off to a good start. I feel rested after a busy week and weekend. The ice cream workshop at @helloganico went really well and it was a lovely morning with a great crowd. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
But now it is back to my desk and time to finish @foodtographyschool, I need to start planning my online class for @skillshare. There I have said it, I have until middle May to submit my teacher challenge. Yikes!! And then I also need to get cracking on the NEW E-BOOK for winter.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Things I am loving at the moment is:⠀⠀⠀⠀⠀⠀⠀⠀⠀
*Watching New Amsterdam on Netflix. I love a good hospital series.⠀⠀⠀⠀⠀⠀⠀⠀⠀
* I am on week 8 of @sweat. It is still hard but I feel stronger and exercising is becoming a habit I am looking forward to.⠀⠀⠀⠀⠀⠀⠀⠀⠀
* Listening to the @drcarolineleaf podcast. She is Neuroscientist, mental health & mind expert.⠀⠀⠀⠀⠀⠀⠀⠀⠀
* Going for walks and runs in @deltaparksa⠀⠀⠀⠀⠀⠀⠀⠀⠀

A quick butternut soup recipe for you. I made this

A quick butternut soup recipe for you. I made this recipe again yesterday in a cooking class and have been making it for years in my domestic cooking classes. It is packed full of flavour and the best part is that you don't need to chop the butternut!! Over the years I have developed so many shortcuts because believe it or not, I don't like to slave away in the kitchen all day long or have a pile of dishes to wash up afterwards.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 kg butternut⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbs olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 onion chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 thumb size piece of ginger grated⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 garlic cloves chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp mild curry spices⠀⠀⠀⠀⠀⠀⠀⠀⠀
850ml of chicken or vegetable stock⠀⠀⠀⠀⠀⠀⠀⠀⠀
200ml of coconut milk or cream⠀⠀⠀⠀⠀⠀⠀⠀⠀
pinch of salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 200'C and place the whole butternut/s in the oven and roast for about 40-60 minutes until you can stick a knife in. Ideally, you would also like to some caramelisation on the skin. Cut in half and leave to cool down.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heat olive oil in a pot and add onions, fry until translucent and soft. Add ginger, garlic and curry spices and fry for a few more minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
While the onions are cooking, scoop the seeds out of the butternut and then scoop the flesh out and place in the pot with the onions. If it is easier to peel the skin off and then chop you could also do that.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add stock and cook for about 10 minutes. The butternut will already be soft at this stage. Blend with a stick blender. I love using my @bamixsa for this.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add cream or coconut milk, adjust seasoning and liquid if it is still too thick.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve with a drizzle of coconut milk toasted pumpkin seeds and chilli flakes. Ideal for the autumn weather, make a double batch and keep it in the freezer.

I love rusks, with early morning coffee on camping trips, holidays, hiking trips and coffee in bed. It has been very much ingrained in me. If there are rusks in my home I will eat them. So I don't buy them often and to the disappointment of my family I don't bake them often. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Rusks are very much a South African thing and is basically a dried biscuit you dunk in your coffee & tea. If you have never made your own rusks you won't realise what high quantities of butter and sugar are in rusks our grandmothers really did now how to add the sugar & butter to baked goods. Some recipes claim to be healthy but in reality only the fibre has been increased by added bran.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I have tested many rusks recipes, reducing sugar, making them vegan. Adding various gluten-free flour blends but they have ended up rock hard or a crumbly mess.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
So making these 'Healthier' gluten free rusks had me feeling like I won the rusk Lotto. My sister had a baby three weeks ago and I made a batch for them and got the thumbs up. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I have kept it simple and used @healthconnectionwholefoods gluten-free self rising flour. And also did not add seed-oil but olive oil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
