Broccoli and Grape salad

Description

It is a great recipe for meal prep. This is a raw salad, no cooking is required. But the broccoli could be steamed in advance if you prefer it slightly cooked.

Ingredients

1 broccoli head finely chopped

2 cups red grapes, sliced in half

1 cup chopped cucumber

125g roasted chopped almonds

100g f eta cheese

halve a red onion finely chopped

fresh herbs like dill and mint

125g streaky bacon fried (optional)

Salad Dressing

1/4 cup olive or avocado oil

2 tbsp lemon juice

2 tbsp pickle juice

1 tbsp mayonnaise

1 tsp dijon

1 garlic clove, minced

1 tsp honey to taste

salt to taste


Instructions

Rinse broccoli and chop roughly into smaller pieces.

Fry bacon until crisp and finely chopped. Roughly chop almonds

Combine ingredients for salad dressing in a jar and shake.

Combine broccoli, grapes, bacon onions, feta, and herbs, and mix well with dressing. Sprinkle almonds on top.
