$WEEK 2 DAY 1 Curry in a hurry This is such a quick recipe. A rich, fragrant curry with chickpeas. Serve with rice or naan bread. This is @jamieoliver \'s two ingredient naan bread that you could modify. Just use coconut yogurt to make it vegan and brush with olive oil instead of butter. $I am awaiting a nice big order from @unwrapped_co. Let\'s just say I have not been very good at zero-wasting. I spent most of yesterday sorting, cleaning and throwing out. Wiping shelves, refilling jars. Re-assessing my life choices regarding my kitchen equipment, food magazines etc. I don\'t struggle too much to let go of possessions and clutter but I have been holding on to my @bbcgoodgood @deliciousmag and @freshliving_pnp magazines for years. I even shipped them when we moved from the UK. But it is time. I am going to page them one last time for inspiration and will then be donating them. They are taking up space, gathering dust. $WEEK 1 DAY 4 Tofu \'poke\' bowls This is one of my favourite recipes from our plant-based guide. And really is summer in a bowl.🌞 Tofu has been around for many years but for most of us it is still a foreign concept. It does not really taste like anything and have the texture of a soft cheese. So it needs a marinade or sauce to turn them into taste explosions. And the sauce in this recipe does just that! Why eat tofu? It is a good protein and contain all 9 amino acids. It is also a valuable plant source of iron and calcium. And it is cheaper than meat. I also love edamame beans and keep a bag in my freezer for salads or bowls. Just add hot water and use, but see if you can get shelled ones from an Oriental shop.
